Our Table opened in June 2015. The restaurant operates on the premise that honesty and a focus on keeping our menu (and business dollars) local is the best way to provide for our families, employees, guests, growers, and community.
Chef Michael Holbein, owner, and manager of Our Table was raised in Cleveland, Ohio and started his restaurant career at age 14. Coming to Olympia by way of San Diego, Chef Mike believes strongly that local and sustainable are the keys to success in the kitchen and in business. Mike is a member of "A Human Touch Chef’s Group", a Puget Sound-based “culinary mercenary” group dedicated to using their skills and talents to raise funds for worthy causes such as GRUB, Hood Canal School, the Chehalis School District Gifted Students Program, and most recently helping to build a greenhouse at Timberline High School in Lacey. He has led kitchens at such Olympia establishments as Rosie’s on Rogers and The Chestnut Corner Café, served as Executive Chef at The Robin Hood Pub & Restaurant in Union, WA, and was a Fish Monger at The Olympia Seafood Co. before beginning the project that would become Our Table. When not working at the shop, Mike can be found enjoying the outdoors with his family or encouraging local cooks to express their passion in the kitchen.
We strive to bring our vision of a sustainable business and our belief in ourselves to Our Table every day. We appreciate the dollars spent here by our community and work hard to reinvest them in the Olympia area, and in Washington State. The state of our industry and of small business as a whole is, quite frankly, troubling and we believe that innovation is the key to restoring a sense of equity in the business. It starts by paying all our staff equally, and asking everyone to be diverse in what they can do here so that they can grow with us, or leave with a greater skill set and provide better for themselves. We hope that our guests see the difference in service and food at Our Table; we look forward to growing as a business and hope that others see our model and are inspired to take a risk and make a change!
